So today marks the first day of May. Someone please let me know where Spring and the month of April went!
One way to kick start May festivities is to eat, drink and be merry for Cinco de Mayo. A fun and simple dish for any Cinco de Mayo party is homemade guacamole. Guacamole for breakfast, guacamole for lunch and guacamole for dinner! Ok, maybe not for breakfast, but I beg to differ.
Here is a little twist to the usual guacamole recipe. Adding fresh pink grapefruit in place of lime adds the perfect acidity and sweetness to have your friends and family raving about this guacamole until next year’s festivities.
3 large avocados
1/2 pink grapefruit, juiced
half red onion, minced
1 jalapeno, minced
1 tbsp cilantro, chopped
1/4 tsp cinnamon
salt and pepper, to taste
Cut avocados in half, remove seed and scoop flesh out the shell. Cut into desired chunks or mash.
In a medium bowl mix avocados and grapefruit juice (I added some grapefruit chunks) to evenly coat. Add onions, jalapenos, cilantro and give a quick toss. Add cinnamon and salt and pepper to taste.
*Quick tip: Save the seed of the avocado and place in with the guacamole in an air-tight container to help reduce natural browning.
