The Summer means one thing, grilling season! Serve on top of grilled eggplants, tofu, avocado or even fresh grilled corn on the cob  (highly recommended).

Watermelon Salsa

A sweet, spicy, tangy and refreshing combo t’s finest!

Watermelon Salsa

Ingredients:
1 cup seedless watermelon, diced
1 jalapeno, minced
1 lime, juiced
1/2 cup red onion, diced
1 tbsp cilantro, minced
salt and pepper, to taste

Steps:
Mix all ingredients together and season with salt & pepper to taste.

Note: Keep finished recipe in the refrigerator for about 15 minutes if  you prefer a more sweet flavored salsa. Give a quick toss right before serving.
